Tuna Patties Serves 4
4 cans of Tuna packed in water 1/2 small onion 1 stalk of celery 1 cup of bread crumbs 1/2 cup of wheat flour 3 eggs 1/3 cup of olive oil Sea/Cosher salt & pepper to taste
Drain tuna really well. My suggestion would be to put it in a mesh strainer and leave it for about ten minutes. Mash the tuna really good or put in a food processor with a few quick pulses. Chop onion an celery to desired size. (I perfer to chop mine small) beat eggs until well mixed. Add the bread crumbs, eggs, seasoning and vegetables to tuna and mix well. Preheat pan add olive oil. Form patties and coat with wheat flour and fry in olive oil. (These can also be baked in the oven)
