Whole Wheat Egg Bread aka Challah
(moist and fluffy, perfect for sandwiches)
INGREDIENTS
1 cup warm skim milk (can use water) about 105-110 degrees F
1/2 tablespoon salt
1/4 cup honey
2 eggs
1/4 cup olive oil
4 cups white whole wheat flour
2 1/4 (or 1- .25oz pkg) teaspoons active dry yeast
DIRECTIONS
~In a large bowl, dissolve yeast in warm milk/water. Let stand until creamy, about 10 minutes.
~Stir the oil, honey, eggs, salt and 2 cups of flour into the yeast mixture; beat well. Stir in the remaining flour, 1/2 cup at a time, mixing well after each addition. When the dough has pulled together, turn it out onto a lightly floured surface and knead until smooth and supple, about 8 minutes. (*If using stand mixer, once dough has pulled together and away from the sides, switch to the dough hook attachment and knead on speed "stir" or "2" for the required time).
(**If using a bread machine: Place water, salt, honey, eggs, oil, flour, and yeast in order recommended by manufacturer into the bread machine. Set the machine to Dough cycle, and start. )
~Lightly oil a large bowl, place the dough in the bowl and turn to coat with oil. Cover with a damp cloth/plastic wrap (I use a HUGE tupperware bowl w/a lid) and let rise in a warm place until doubled in volume, about 1-1 1/2 hours.
~Deflate the dough and turn it out onto a floured surface and form into a loaf. (**If using bread machine: Remove dough from the machine after first rising), shape into a loaf and place in a 8 x 4 inch greased loaf pan. Cover with a damp cloth (or lightly w/plastic wrap) and let rise until doubled in volume, about 40 minutes. Meanwhile, preheat oven to 350 degrees F (175 degrees C).
(if desired, you can brush the top of the loaf w/1 egg white mixed w/a tablespoon of water at this time to give a nice shiny crust)
~Bake at 350 degrees F (175 degrees C) for 30 to 40 minutes. Bread is done when the crust is golden brown on all sides.
