This recipe is not from scratch, but came about early in our marriage when we were going through financially. These were the days when we prayed that the lights or gas didn't get turned off and a telephone was a luxury You know, one of those Lord if you don't provide it we won't have it situations.
This was in the early days before my husband became a Pastor. You know, sometimes people have a way of inviting themselves over your house for dinner, and being a clergy family you either lied and said you had somewhere to be, or pulled a rabbit out of the hat, And let me tell you ladies I have done so on many occasions. But this particular day a minister friend of my husband showed up on our door step with wife in tow, said they stopped by because they were in the neighborhood. But personally I think they were worse off than we were. I tried to wait for them to leave before I started looking for something to cook, but they wouldn't leave so I took a deep breath and went into my kitchen to see what I had. Refused the help of Debra.the wife because I didn't want her to see just how empty my fridge and cabinets were.
I started fussing at the Lord, why would he send these people over here knowing full well we didn't have anything to offer them. I was having myself a good ole pity party that day. As I continued to fuss with the Lord, I looked in the cabinet and found a large can of tuna I didn't know I had, I had a small bag of rice, the kind we use to get from churches with the free government cheese, one can of corn and one can of string beans. I had a half of loaf of bread, a box of jiffy corn muffin mix and a box of bis quick that had a little over a cup of mix. In the fridge I had 4 eggs, one celery stalk that had turned kind of yellow and soft. a little less then a half of onion.
While still fussing at the Lord, I took that tuna opened and drained it. put the bread in the oven to dry it out, I cut up the pieces of onion and celery made bread crumbs and mixed all this with the eggs. I made patties and fried them in old grease I had in a can on my stove. I made the rice and mixed the corn and string beans so it would stretch. Now for the biscuits.
I took the box of jiffy mix and added it to the bisquick mix added 1 egg and just enough milk to make a dough. Rolled it out cut them out with cup put them in the oven and that was how they came about.
I told this whole long story just to show how God provides even in our whining and complaining. And not only did he provide for us, but also through us for someone else in need. I can honestly say from that day on we never had to worry about where our next meal was coming from because my Lord always provided. And that couple shared a lot of meals with us. They have been Pastoring in Atlanta for the past 10 years, and we do stay in touch.
And it's funny, because those meals that I made up during those times are now some of my husbands favorite meals.
