Spring is in the air, and visions of this year's garden are rolling around in my head. I've begun making plans for my vegetable garden this year (this will be only my 3rd year of having a garden), and dh and I got out there yesterday and starting tilling our garden plot that we have on the side of the house. Each year we've been planting more and more items, and my goal is to one day have enough bounty to have fresh produce all summer & fall, and enough leftover to put up (can, freeze, etc) to last us through winter and spring, to our next harvest season. This year we will be planting potatoes, carrots, onions, tomatoes, various herbs, cucumbers, corn, collards (already have these growing from last year), squash (of all types: zucchini, winter, summer, pumpkin, etc), strawberries, watermelon, and canteloupe, just to name a few ;D.
Although, I never thought I'd be one to be "in touch w/nature," I've found gardening truly satisfying. Some pro's that I've discovered: it's a fun way to spend time w/the kids (they can get dirty w/o getting in trouble, lol ), it's very helpful when trying to understand many biblical examples of sowing and reaping (as well as helping the kids understand once they've been involved in the garden), it's peaceful, it's great exercise, and it's a great encouragement to eat better (after all, someone's gotta eat the harvest , and kids are much more likely to eat veggies if they've helped to grow them).
Any one else have a garden, or considering having one this year? I will also be sharing some of my favorite fresh produce recipes as the season progresses, if anyone has some to add, please do..
